Let’s make this super easy Strawberry Icebox Pie recipe. It is quick and requires very little baking. The perfect recipe since we are all so busy around this time of the year. A food processor is practical to make the crust however you do not need it. To finely crush the crackers, place the crackers in a food storage bag, such a Ziploc, and roll a rolling pin until finely crushed… if you don’t have a rolling pin use a wine bottle.
You’ll need: One 9-inch pie plate
Strawberry Icebox Pie
10 graham crackers (2-1/2 by 5 inches)
1 cup fine granulated sugar
5 tablespoons unsalted butter, melted
1/2 cup unsweetened cranberry juice
2 quarts strawberries, hulled and thinly sliced (a few whole berries reserved for garnish)
1/4 cup cornstarch
1/4 teaspoon salt
1/2 cup heavy cream
