Gluten Free Banana Apple Walnut Muffins
Makes 12 muffins

You’ll need: a 12-cup muffin pan with paper liners

1/2 cup buckwheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon coarse salt
4 large eggs
1 banana, mashed
1/2 cup honey
2 small apples (about 1-1/4 cups), small diced (peeled and cored)
1/2 cup chopped walnuts
